Mediterranean Sandwich
- 200g Premium Dough
- Crisp
- Olive oil
- Kosher salt
- 4 tablespoons Crème Fraîche
- 1/2 sweet potato
- 1/2 courgette
- 3 slices of red onion
- 1/4 Mozzarella in slices
- 2 slices of Salame Ventricina
- Ruccola
- 3 halved cherry tomatoes
- Prepare the dough according to instructions
- Roll the dough in crisp
- Spread it in an oval baking tray with a thickness of about 1,5-2 cm
- Bake for approx. 3 minutes at 250°C until the ciabatta popped up and is big enough to cut it into halves
- Remove the ciabatta from the oven, evenly spread olive oil on it and top with some kosher salt.
- Bake again until it is as browned as you wish
- Shortly let cool and cut it up sideways
- In the meanwhile cut the courgette and sweet potato in very thin slices and bake them together with the red onions and a bit of olive oil in the oven for about 2 minutes
- Spread Crème Fraîche on the ciabatta and then top it with ruccola, mozzarella slices, Salame Ventricina, cherry tomatoes and the baked veggies
